Homemade Local Specialty + Recipe

My friend and I had made this Kuih Seri Muka the other day. Doesn't look very appealing but the taste is nice.

First attempt, not that bad actually. Haha!
Kuih Seri Muka

Ingredient A:
400g glutinous rice (soak till soft)
1 piece of banana leaf
400ml coconut milk
1/4 teaspoon salt


Ingredient B:
50g flour
160g sugar
4 eggs
375ml coconut milk
1 teaspoon vanilla essence
1 teaspoon salt
1 tablespoon pandan juice / a little green coloring


Method:
1. Mix well glutinous rice, coconut milk and salt. 
    Steam till cooked.


2. Brush some oil in an 8inches tray. 
    Pour in cooked glutinous rice. 
    Press with a banana leaf until very firm.


3. Mix ingredient B and strain for several times. 
    Pour topping onto glutinous rice and steam for 15 minutes over low heat till sets.
    
4. Leave kuih to cool before cutting it into pieces. 



Another home-made Chives Dumpings. 


Chives Dumplings

Wrapper:
250g rice flour
100g wheat starch
500ml boiling water
4 tablespoon oil

Filling:
150g chives (minced)
150g dried shrimps (chopped)
300g chicken flesh (steamed and diced)
2 pieces beancurd (diced)
1 tablespoon garlic (minced)

Seasoning:
1 teaspoon salt
1 teaspoon chicken powder
A dash of pepper
(This recipe makes approximately 15 pieces of chives dumplingss)

Method-filling:
Saute garlic and dried shrimps till fragrant. Add in chicken & beancurd. Fry for a short while. Add in chives and seasoning. Stir well.

Method-wrapper:
Mix rice flour, wheat starch and water into a pot. Keep on stirring whilst cooking till it becomes a dough. Add in oil and knead to a smooth dough. Cut into small doughs weighing 50 gram each.

Method:
1) Shape small doughs into half circles.

2) Add 1 portion of filling into each wrapper. 
    Fold from both sides to form a pouch shape.

3) Place a piece of banana leaf in the steamer.
    Brush some oil and place prepared dumplings onto it.
    Steamed for 10 minutes. Serve hot.
